Capsicum Curry with Tomato

  • 250 g Capsicum
  • 1 ripe tomato cubed
  • 1/2 tsp raw curry powder
  • 1 tsp chilli powder (or less)
  • 1 tsp Maldive Fish Powder
  • 1 inch stick Rampe
  • 1/2 tsp turmeric
  • 1 Cup Coconut Milk (Freshly squeezed Milk makes a huge difference over ready made)
Onion Mixture
  • 1 tbs Coconut Oil
  • 3 red onions (Always use Red onions over Big onions for better flavour)
  • Sprig of Curry Leaves
  • 2 cloves crushed garlic
  • 1 finely chopped green chilli

Stir fry the onion mixture til aroma hits you and the onion starts browning, Add the rest of the ingredients (capsicum+spices+rampe+tomato) Stir well until thoroughly combined. Quickly Add the milk and cook for 10 minutes on medium-high heat.
