
Carrot Salad With Raisins and Cashews

INGREDIENTS
- Organic carrots, grated or matchstick - 300 to 350g (about 4 - 5 cups)
- Organic lime, zest - 1 tbsp
- Garlic clove, finely minced - 1 clove
- Organic fresh ginger, finely minced - 1 tsp
- Raisins (golden or regular) - 1/3 cup
- Toasted cashews - 1/2 cup
- Organic baby onions - 3
- Organic coriander, chopped - 1/2 cup
- Olive oil - 1/4 cup
- Organic lime, juice - 3 tbsp
- Wild bee honey - 2 tbsp
- Salt - 1/2 tsp
- Organic black pepper powder - to taste
- Organic turmeric powder - 1/2 tsp
- Organic unroasted curry powder - 1 tsp
- Organic chilli powder - 1/4 tsp or more to taste
METHOD
Place all ingredients in a bowl and toss well. Taste. Adjust salt, acid and sweetness to taste.
This will keep up to 4 days in the fridge.
