Ingredients

• Courgettes halved and seeds scooped out 
• Some mozzarella cheese or a mix of soft cheese
• Tomatoes chopped
• Green or red chillies chopped
• Some coconut oil
• Salt and pepper to taste

Method

• Drizzle the coconut oil over the courgettes.
• Mix cheese, tomato and chilli, fill the courgette boats with the cheese mix bake in a hot oven for 10-15 minutes till the cheese is golden brown.
• Sprinkle salt and pepper.
