
Falafel with Organic Coriander & Parsley

Ingredients
- 1 1/2 cups dried chickpeas soaked overnight in water and 1/2 teaspoon baking soda
- 1 cup fresh organic parsley leaves
- 1 cup fresh organic coriander leaves
- 1 small organic onion
- 4 cloves garlic
- Salt to taste
- 1 teaspoon ground organic black pepper
- 1 organic green chilli
- 1 teaspoon sumac (optional)
- 1 tsp baking powder
- 2 teaspoons flour or chickpea flour
- Organic virgin coconut oil for deep frying
Cooking Method -
Place all ingredients except the last three (baking powder, flour, oil) in a food processor, process until the mixture is crumbly. Transfer to a bowl and add the flour, mix. Refrigerate for 30 mins, then add baking powder and mix. Make small balls pressing the mixture gently, fry in hot oil few at a time.
Crunchy on the outside, soft inside.
