
Ladies Finger & Tomato Kuzhambu

INGREDIENTS
- Organic ladies Finger, chopped - 10
- Organic tomato - 3
- Organic green Chilli, slit - 3
- Organic curry leaves - handful
- Organic chilli Powder - 1 tblsp
- Coriander powder - 2 tblsp
- Salt to taste
- Turmeric powder - ½ tsp
- Fennel seed powder - 1 tsp
FOR GRINDING:
- Coconut -3/4 cup
- Organic small Onion - 5 to 6
- Garlic - 3 cloves
FOR SEASONING:
- Organic virgin Coconut Oil - 2 tbsp
- Mustard Seeds / Kaduku - ½ tsp
- Organic curry leaves - a handful
METHOD
- Take tomatoes in a clay pot. Add spice powders, chillies and curry leaves. Add salt and mix well. Crush tomatoes using your hands. Add water.
- Now add in ladies finger and cook till it is cooked.
- Now add in the ground coconut masala and boil for 5 more mins.
- Take it off the heat.
- Heat oil in a pan, add mustard and curry leaves. Pour this over the curry and mix well.
- Serve with Organic heirloom rice
