Roast Vegetable Rice Salad

Ingredients for Roast Vegetables
- 3 Large Potatoes, Cut into Cubes and Lightly Steamed
- 2 Large Carrots, Chopped and Lightly Steamed
- 5 Cloves Garlic
- 3 Tbs Coconut Oil
- a few Sprigs Rosemary
- Salt & Pepper to taste
Add above ingredients to Roasting Pan, Rub the Coconut Oil into the Vegetables and Roast in Oven till Soft & Golden brown. Set Aside.
- 1 Cup Green Peas
- 1 Brown Onion
- 2 Tbs Coconut Oil
- 1 Cup Spinach
- 1.5 Cups Kale
- A Pinch of Paprika
- 2.5 Cups Cooked Rice
Add Coconut Oil and Onions into a wok.
Sauté till the Onions are Slightly Browned and translucent.
Then add the Vegetables one by one, stirring as you go.
Lastly add the Roast Vegetables and mix well.
