Tomatoes are an essential part of your meal as they serve a wide range of purposes. They improve digestion, while preventing constipation and formation of stones in the kidney and gall bladder. The vegetable (or fruit rather) helps strengthen the immune system, reduces the risk of blood clots, protects your vision and prevents degenerative eye disease. It is also a rich source for essential antioxidants.

Although commonly categorised as a vegetable, the tomato is in fact a fruit!

Can be eaten raw or cooked.

To whip up a quick Fresh Tomato Salsa, in a medium bowl, stir together tomatoes, onion, chilli peppers, cilantro, salt, and lime juice. Refrigerate for an hour before serving.

Forget other soup varieties and give this Raw Tomato Soup with Basil Oil a try. Thoroughly blend tomatoes, onion, garlic, olive oil, and ? teaspoon of paprika until smooth. Add salt, pepper and more paprika to taste. For the basil oil, either pound the basil leaves to a paste using a pestle and mortar and stir in the oil or blend the leaves and oil in a mini food processor. Ladle the soup into a bowl, swirl some basil oil over the top and serve. Smiles guaranteed!
