Also known as butternut pumpkin, ‘Batana’ is a type of winter squash
usually of yellow skin, you can identify the sweeter, richer ones by their deep orange colour.

Creamy butternut soup is a delightful starter. Get started by heating the oil in a pot over medium heat. Add the onion, ½ teaspoon salt, and ¼ teaspoon pepper and cook, stirring occasionally. Cook for 6 to 8 minutes or until tender. Add the broth, butternut pieces and 1 cup water and bring to a boil. Reduce heat and simmer for 15 minutes until the squash is tender. Working in batches, puree in a blender until smooth. Stir in the lime juice and serve.
