Ingredients
- Courgettes halved and seeds scooped out
- Some mozzarella cheese or a mix of soft cheese
- Tomatoes chopped
- Green or red chilies chopped
- Some coconut oil
- Salt and pepper to taste
Method
- Drizzle the coconut oil over the courgettes.
- Mix cheese, tomato, and chili fill the courgette boats with the cheese mix and bake in a hot oven for 10-15 minutes till the cheese is golden brown.
- Sprinkle salt and pepper.
